Instructions

1. Whip the tahini and lemon juice. Combine the tahini and lemon juice in a food processor. Process for 1 minute, scrape down the sides and bottom of the bowl, then process for another 30 seconds. This step helps create a smooth, creamy base.

2. Add the seasonings. Add the olive oil, minced garlic, cumin, and ½ teaspoon of salt. Process for 30 seconds, scrape down the bowl, and process again until everything is well combined.

3. Blend the chickpeas. Add half the chickpeas and process for 1 minute. Scrape down the sides, add the remaining chickpeas, and blend for another 1-2 minutes until the mixture is thick and mostly smooth.

4. Adjust the texture. With the food processor running, slowly add 2-3 tablespoons of cold water or aquafaba until the hummus reaches your preferred consistency. Blend a little longer for an extra-smooth result.

5. Taste and serve. Taste and adjust the seasoning, adding more salt or lemon juice if needed. Transfer the hummus to a serving bowl, drizzle with olive oil, and sprinkle with paprika, sumac, or za’atar.

6. Store leftover. Transfer the hummus to an airtight container and refrigerate promptly. For best quality, enjoy within 3-4 days. You can also freeze hummus in a suitable airtight container for up to one month; thaw it in the refrigerator and stir well before serving.
