Instructions
1. Prepare the beets. Preheat the oven to 425°F (220°C). Peel the beets and cut them into evenly sized pieces. Arrange them in a baking dish and add a little water to create steam.
Add the coriander seeds, bay leaf, olive oil, and salt. Cover tightly with aluminum foil.
2. Roast until tender. Roast for approximately 45 minutes, or until the beets are easily pierced with a fork. Allow them to cool slightly, then remove and discard the bay leaf.
3. Toast the sesame seeds. While the beets are roasting, toast the black sesame seeds in a dry skillet over low to medium heat for a few minutes, stirring frequently, until fragrant. Set aside to cool.
4. Blend the beets. Transfer the roasted beets and coriander seeds to a food processor. Pulse until finely chopped. The mixture will be thick and vibrant red at this stage.
5. Add the hummus. Add the tahini hummus to the food processor. Blend, stopping occasionally to scrape down the sides of the bowl, until the mixture becomes smooth, light, and creamy. This may take several minutes.
6. Make it extra creamy. Transfer the beet hummus to a bowl and gently stir in the Greek yogurt until fully combined and no streaks remain.
7. Garnish and serve. Spoon the hummus into a serving bowl. Add a dollop of Greek yogurt in the centre, if desired, and use the back of a spoon to create a small swirl.
Drizzle with olive oil, sprinkle with toasted black sesame seeds, and finish with fresh cilantro leaves.
Serve with warm pita triangles or fresh vegetables and enjoy!
