Ingredients
- 220 g rolled oats
- 2 large apples, unpeeled
- 2 eggs
- 1 ripe banana
- 80 g dried cranberries
- 80 g almonds, roughly chopped
- 1 tsp vanilla extract
- A squeeze of lemon juice
- Olive oil, for greasing the baking dish
Instructions
1. Prepare the oats. Place the rolled oats in a blender or food processor and blend until they resemble a coarse flour.
2. Prepare the apples. Wash and core the apples, leaving the skins on for extra fibre. Cut them into chunks and blend with a squeeze of lemon juice until finely chopped.
3. Mix the ingredients. In a large bowl, combine the ground oats and chopped apples. Add the eggs and vanilla extract, then mash the banana and stir it into the mixture. Fold in the cranberries and chopped almonds. Mix well until all the ingredients are evenly combined. The batter will be relatively moist because it contains blended apples and banana. If it seems too wet, allow the ground oats to absorb some moisture for 5–10 minutes before baking
4. Prepare for baking. Lightly grease a baking dish or cake pan with olive oil. Transfer the mixture to the pan and spread it evenly.
5. Bake. Preheat the oven to 180°C (350°F). Bake for approximately 40 minutes, or until the cake is set and lightly golden. Check the centre with a toothpick; it should come out without wet batter.
6. Cool and enjoy. Allow the cake to cool for a few minutes before slicing. Enjoy it warm or cold, on its own or with plain yogurt and fresh fruit.
