
Your Attractive Heading
This is one of my favourite summer salads-fresh, colourful, simple, and so easy to prepare. It is perfect for a light lunch, a side dish, or a quick meal on a warm summer day.
What you need:
- Whole-wheat couscous
- Cherry tomatoes
- Cucumber
- Sweet pepper
- Fresh dill
- A little olive oil
- Salt and freshly ground pepper
How to make it:
Start by preparing the whole-wheat couscous. Place the couscous in a bowl and pour boiling water over it, following the package directions for the amount of water. Cover and let it sit for several minutes until the couscous has absorbed the water and become tender. Fluff it gently with a fork and let it cool slightly.
While the couscous is resting, chop the cherry tomatoes, cucumber, and sweet pepper. Finely
chop a generous handful of fresh dill.
Add the vegetables and dill to the couscous and gently mix everything. Drizzle with a little olive
oil and season with salt and freshly ground pepper.

I love how this salad brings together whole grains, fresh seasonal vegetables, and fresh herbs in one simple dish. You can enjoy it right away or make it ahead and keep it in the refrigerator for an easy meal later.
