Couscous salad

Simple summer salad

  • 1 3/4 cups water
  • 1/4 teaspoon kosher salt
  • 1 1/2 cups couscous

In a saucepan, bring water to a boil.

Add salt and couscous and cover the pan. Remove from heat and allow to sit for about 5 to 6 minutes. Fluff with a fork.

Serve as the base for a stew, as a side dish, or as a salad.

The possibilities are limitless. It absorbs flavors well but also has its flavors and textures to bring to a dish.

You can make a great couscous salad when you add fresh parsley, cherry tomatoes, cucumber, or red pepper.

Price-wise – $ 1.30 per  1 ½ cup of couscous. The rest depends on what you have in a fridge and would like to add.

You can make this salad as colorful as you like.
